做法较为复杂独特，先将泥鳅放养于清水中数日，待其肚中泥沙吐尽，再取猪油若干，鸡蛋数个，乘泥鳅饥饿之时投入让其将猪油鸡蛋吃完，再取嫩豆腐数块，将泥鳅拌清水置入锅内加盖，慢慢加热。泥鳅钻入豆腐内死去，逐旺火让泥鳅肚内的猪油冒出来，再拌紫苏叶等佐料上火锅，其味妙不可言；（口味清淡）
